Ridiculously Easy Garlic Jalapeno Salsa
Prep time: 15 minutes
Yield: 4 cups 



Ingredients:

·  1 (28oz) can of diced tomatoes

·  2 small tomatoes diced

·  1/2 of a red onion chopped

·  2 jalepenos, chopped

·  2 garlic cloves, minced

·  1/4 cup of cilantro, finely chopped (optional)

·  1 lime, juiced

·  1 tsp. cumin

·  2 tsp. salt


Directions:

1.To prep dice, chop, or juice all ingredients. Place all ingredients into large food processor or blender.

2.Grind all ingredients for 30 seconds until smooth and incorporated.

3.Serve right away or refrigerate (up to 3 days) until ready for use.


Double This Guacamole Recipe or You’ll Feel Sad When it’s Gone
Prep time: 20 minutes
Yield: 3 cups



Ingredients:


5 ripe avocados

2-3 Serrano peppers

1 large tomato, diced
1 small red onion, diced
2 limes juiced
1/4 cup cilantro, finely chopped (optional)
1/2 tsp. cumin

1/2 tsp. cayenne pepper
1/2 tsp. salt
1/4 cup sour cream



Directions:

1.Half and spoon out avocados, place in a medium bowl.

2.Using a spatula mix in tomatoes, red onion, lime juice, cilantro, cumin, cayenne, and salt until incorporated.

3.Slowly fold in the sour cream until incorporated. Season more if needed.

4.Serve to your fans!

 


Chili Con Delicious Chicken
[ed. note: Only 1 WW Point per cup!]
Prep time: 20 minutes
Yield: 8 servings 


Ingredients

·  12 ounces boneless skinless chicken breasts , diced

·  2 (22oz cans) of diced tomatoes

·  15 ounces canned corn , undrained

·  15 ounces canned kidney beans , drained

·  1 green bell pepper , chopped

·  1 onion , chopped

·  ½ cup salsa

·  ½ teaspoon cayenne

·  ½ teaspoon cumin

·  Pinch of ground cinnamon


Directions:

1.Heat a sprayed, non-stick skillet to Medium-High. Lightly season the chicken with salt and pepper, sear chicken until browned.

2.Add chicken to a crock pot with remaining ingredients.

3.Cook on Low for 4-5 hours. Stir occasionally.
